Known for crafting beloved wines and boldly venturing into the unexpected, Chateau MerrillAnne has once again pushed the boundaries of traditional winemaking with the release of its newest creation: Schrödinger’s Cat Black Chardonnay.

This innovative wine draws from ancient techniques rarely seen in today’s winemaking. While modern methods typically aim to limit oxygen exposure during production—preserving fruit flavors and avoiding browning—Black Chardonnay turns that convention on its head. In this case, oxygen becomes the hero.

To create Black Chardonnay, oxygen is deliberately introduced to the juice before yeast inoculation, and no sulfur dioxide (SO₂) is added during this phase. The result is a juice that initially turns an almost black hue due to the oxidation of phenols. Then, the must is cooled to prevent fermentation while the dark phenols settle out. In just a few days, the color shifts from deep brown to a striking golden hue, leaving behind a juice with softened sharpness and preserved fruit character. From there, the wine proceeds through a more traditional production path.

The wine’s whimsical name—Schrödinger’s Cat—reflects the uncertainty the winemakers faced during its creation, referencing the famed quantum physics thought experiment in which the outcome remains unknown until the final reveal. For Chateau MerrillAnne, the result was well worth the risk:
“Truthfully, we weren’t entirely sure how it would turn out,” said winemaker Kenny White. “When it came time to leave the oxygenated juice alone and let it work its magic, the final result was uncertain—much like the famous thought experiment.”

Schrödinger’s Cat joins a lineup of other boundary-pushing offerings from the winery, including The Laranga, an orange-style Viognier; Vincello, a limoncello-style fortified wine; and Green & Royal, a bold, red fruit-forward blend.
